How Steam Is Used in Coffee Shops

On today's episode of Steam Culture, Brent and Alan from the Coffee Crossing coffee shop investigate steam's role when making coffee.

When a coffee shop makes a cup of coffee, specifically a Latte, the steam allows two things to occur with milk:

1. The steam breaks down the lipids into carbohydrates and sweetens the flavor of the milk, which is different from simply warming the milk.

2. The steam allows the milk to turn into a frothy, velvety foam to top the Latte.
